So I'm wanting to do a big piece, have some 24x36' canvases and a couple of 36x48" canvases. Don't currently have any black gesso, so needing a lesson that will translate really well to this size of canvas. Any ideas would really be appreciated thanks!

Pthaloblue I suggest to go with Nick lesson rather than Bob for such big canvas due to the sufficient space to paint details. Those videos all 1 hour long, he is certified and selected by BR company for Keeping The Bob Ross Dream Alive.
So go to youtube - type in search - "Keeping The Bob Ross Dream Alive" you will see those 5-7 1 hour long detailed videos made by Nick and select the best one you like, because at the end you need to like what you paint and not to be limited by what Bob had to do in 30 min. If you have access to buy Bob Ross full lessons CDs or books you will have better choice as both are more detailed.

    Pthaloblue if you dont have black gesso but have black oil paint - premix it on pallet with few drops linseed oil and turpentine/OPT mix (50/50 mix) and cover your white canvas in quite thin layer. Let it dry for two-three weeks and paint on top. You may need more or less thinner/turp depending on quality of canvas you have.
